hackrf_transfer stores samples in 8 bit signed IQ format. It should be straight forward to read them in to Matlab (or GNU Octave). The GNU Radio wiki has a few tips too:
complex float (The file format of this data is .bin i.e binary) In complex float format the data is encoded with 64 bits, 32 bits for I and 32 bits for Q. My intent is to use fread if I can get the file opened. Upon trying to open the file using uiimport MATLAB hangs with "opening a large text file" message and eventually errors with "out of memory". I don't know if there is some compression going on in Matlab but the recorded file does not work in the decoder either.
